Trying Tempeh

The next recipe I tried was a stir fry with marinated tempeh. Now my title "trying tempeh" is quite accurate because I have always found tempeh very trying. I liked it one time in my life in a macrobiotic recipe cooked by my brother-in-law, Paul Webb. Mine never seems to taste as good. This time I thought it would better because of the marinating in balsamic vinegar, tamari, garlic, paprika and italian seasoning. The recipe recommended cutting the tempeh in 2" cubes and that seemed huge. Personally I think I like it chopped up in smaller bits. Anyway it was marinated 30 minutes and then put in a stir fry with red onion, mushrooms, zucchini, carrot, artichoke hearts, small tomatoes, parsley and basil - served over brown rice. I will probably try tempeh again sometime, just not right away. If anyone has any hints for cooking or maybe a good brand they have tried, let me know. I am always looking to improve things, trying as it might be.

On a good note, I have seen some benefits from this new cooking regimen. It gives me more energy and really nice skin. I have lost a bit of weight but that seems to have come to an end. Oh well.
