My cure for the hot weather blues

All right Everyone, here is my cure for the hot weather blues: Watermelon Gazpacho! It is a really refreshing cold soup. 

The ingredients: 6 cups of cubed seeded watermelon, 1 cup of coarsely chopped english cucumber, 1/2 cup of coarsely chopped yellow bell pepper, 1/3 cup of chopped green onions, 3 tablespoons of chopped fresh mint, 3 tablespoons of fresh lime juice, 1 tablespoon of extra virgin olive oil, 3/4 teaspoon of salt, 1/2 teaspoon of hot sauce - or none if you like it less spicy, 1 garlic clove, minced, and 1 cup of cranberry/raspberry juice or other berry juice.

Combine first 10 ingredients. Place half of the watermelon mixture in a food processor and pulse 3 or 4 times or until finely chopped. Spoon into a large bowl. Repeat procedure with remaining watermelon mixture. Stir in juice. Chill and serve.
